Carolina Maciel is a researcher at the UK Trade Policy Observatory at the University of Sussex, where her work focuses on the intersection of agri-food trade and international regulatory governance, particularly sanitary and technical requirements relating to food safety, animal welfare, sustainability, and the implementation of international standards adopted by the World Organisation for Animal Health (WOAH, formerly OIE). She also teaches the first course on International Animal Law in the LLM programme at Vermont Law and Graduate School. Alongside her academic research, she has worked on legal consultancy and policy projects commissioned by governmental and intergovernmental entities, including the European Commission, the Inter-American Institute for Cooperation on Agriculture (IICA), and the UK Department for Environment, Food and Rural Affairs (Defra).
